Brussel Sprouts

Ingredients
- 1 tablespoon of olive oil
- 1 small onion, finely chopped
- 1lb/450g Brussels sprouts, cleaned and quartered
- 1 x 400g tinned chopped plum tomatoes
- 1 red pepper, chopped
- Salt and freshly ground black pepper
- Heat the oil in a saucepan, add the onion and cook, gently, for five minutes until very soft.
- Add the pepper and cook another couple of minutes.
- Add the tomatoes and cook for ten minutes until they have reduced a bit.
- Add the sprouts and seasoning, cover and cook for about 10 minutes until the sprouts are cooked. Check the seasoning and serve.
Cook's Tip: This method can also be used for broccoli florets.
