Brussel Sprouts

Ingredients

  • 1 tablespoon of olive oil
  • 1 small onion, finely chopped
  • 1lb/450g Brussels sprouts, cleaned and quartered
  • 1 x 400g tinned chopped plum tomatoes
  • 1 red pepper, chopped
  • Salt and freshly ground black pepper
Method
  • Heat the oil in a saucepan, add the onion and cook, gently, for five minutes until very soft.
  • Add the pepper and cook another couple of minutes.
  • Add the tomatoes and cook for ten minutes until they have reduced a bit.
  • Add the sprouts and seasoning, cover and cook for about 10 minutes until the sprouts are cooked. Check the seasoning and serve.

 

Cook's Tip: This method can also be used for broccoli florets.
