Leek Salad

Ingredients

  • 350g leeks
  • 1 tbsp white wine vinegar
  • 28g fresh mint
  • 25 ml olive oil

Method
  • Trim and wash the leeks before blanching in boiling water for 1-2 minutes until tender. Drain and refresh under cold water.
  • Mix the chopped mint, oil and white wine vinegar together in a small bowl and pour over the leeks. Add salt and freshly ground pepper to taste.
  • Allow to marinate for 5 minutes before serving.
