Leek Salad

Ingredients
- 350g leeks
- 1 tbsp white wine vinegar
- 28g fresh mint
- 25 ml olive oil
Method
- Trim and wash the leeks before blanching in boiling water for 1-2 minutes until tender. Drain and refresh under cold water.
- Mix the chopped mint, oil and white wine vinegar together in a small bowl and pour over the leeks. Add salt and freshly ground pepper to taste.
- Allow to marinate for 5 minutes before serving.
